Healthy Snacks For Your Next Fishing Trip

Just because you’re going on a fishing trip doesn’t mean you have to eat fish every day. Why not mix it up a little and make some snacks ahead of time? These healthy snacks will give you something to munch on while you’re out on your boat or sitting on a pier waiting for the next bite.

Orange and Cranberry Granola

Ingredients
2 cups old-fashioned oats
¼ cup dried cranberries
1 cup slivered almonds
1/3 cup sliced candied orange peel
¼ cup raisins
Nonstick vegetable oil spray
½ cup maple syrup
1 t hazelnut oil
1 T unsalted butter, melted

Instructions
Preheat oven to 300°F. Spread the oats and almonds over a baking sheet, and toast until slightly browned. Add the mixture to a heatproof bowl. Spray the baking sheet with the vegetable oil. In a separate bowl, add the butter, maple syrup and hazelnut oil and blend. Pour onto the oats and almonds, allowing thorough coverage. Spread this mixture onto the baking sheet. Bake 15 minutes, or until granola is lightly golden. Add the raisins and cranberries, and bake another 10 minutes. Take out of the oven after this, and allow the mix to slightly cool. Mix in the candied orange peel, and cool completely. Break the granola into pieces and store in an airtight container at room temperature.


Spicy Crunchy Chickpeas

Ingredients
¾ t coriander seeds
¾ t cumin seeds
1 T extra-virgin olive oil
1 15oz can chickpeas, rinsed, drained and dried
Pinch of cayenne pepper
Tobasco sauce
Coarse kosher salt

Instructions
Preheat oven to 400°F. Toast the coriander and cumin seeds in a skillet over medium heat until slightly brown. Cool, and add these seeds to a mill or grinder and grind. In a medium bowl, add chickpeas, cayenne, ground spices, salt and olive oil and mix. Add this mix to a baking sheet and roast in oven about 30 minutes until toasted.


Energy Bar

Ingredients
¼ cup light corn syrup
¼ cup honey
½ cup chopped walnuts
3 cups puffed cereal
¼ cup chopped pitted dates
¼ cup chopped dried chopped peaches
1/3 cup creamy peanut butter
¼ cup raisins
¼ cup cranberries
Nonstick vegetable oil spray

Instructions
Preheat oven to 350°F. Spray 9” square metal baking pan with the nonstick vegetable oil spray. In medium bowl, mix cereal with dates, peaches, cranberries and raisins. In a small saucepan, mix peanut butter, corn syrup and honey and bring to a boil, stirring constantly for about 1 minute until the mixture thickens. Pour the peanut butter mixture over the cereal mixture and blend thoroughly. Transfer to pan and press mixture to compact. Bake for 10 minutes until golden brown. Cool, and using sharp knives cut into squares.
